Kek Lapis Sarawak ^^




those are our Kek Lapis Sarawak
we make the cake is using traditional recipe from Sarawak

2” (W) x 2.5” (H) x 8” (L) (estimated)

simple cupcake recipe



Ingredients

• 2 1/4 cups all purpose flour
• 1 1/3 cups sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup shortening
• 1 cup milk
• 1 teaspoon vanilla
• 2 large eggs

Easy Cupcake Recipe Directions

Preheat oven to 350 degrees. Line cupcake pans with paper liners.

Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat for 1 minute on medium speed. Scrape side of bowl with a spatula.

Add eggs to the mixture. Beat for 1 minute on medium speed. Scrape bowl again. Beat on high speed for 1 minute 30 seconds until well mixed.

Spoon cupcake batter into paper liners until 1/2 to 2/3 full.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 5 minutes in pans then remove and place on wire racks to cool completely.

Once cupcakes are completely cooled, frost with your favorite frosting recipe or decorate as you desire.

Christmas Cupcakes Recipes



Method 1

Spread apricot jam on the top of the cupcakes.

Place a selection of fruit and nuts onto the top of each cupcake such as walnuts, glace cherries in different colours, almonds, stem ginger,soft pieces of dates and prunes and cashews.

Drizzle warm apricot jam over the fruits and nuts to create a shiny glaze.

Serve
Method 2

Buy ready made marzipan or make your own.

Roll out and cut out a piece to fit the top of each cupcake.

Spread apricot jam on the top of each cupcake.

Place a circle of marzipan on the top of each cupcake.

Spread apricot jam on the top of the marzipan.

Place a selection of fruit and nuts on to the top of each cupcake.

Drizzle warm apricot jam onto the fruit and nuts to glaze.

Serve.
Method 3

Make butter cream by mixing together unsalted butter, icing sugar 1/2 and 1/2. Add some brandy to the butter cream.

Spread the butter cream onto each cupcake.

Add fruit and nuts and glaze with warm apricot jam.

Serve.

Ginger and Apple Cupcakes Recipes



Ingredients

150gm--5 1/2 oz--2/3 cup of unsalted butter
175gm--6oz--1 cup of soft brown sugar
2 tablespoons of black treacle/molasses
225gm--8oz--2 cups of plain flour(all purpose)
1 teaspoon of baking powder
2 teaspoons of bicarbonate of soda(baking soda)
2 teaspoons of ground ginger
150ml--1/4 pint--2/3 cup 0f milk
1 egg beaten
2 eating apples peeled, cored and chopped and tossed in 1 tablespoon of lemon juice


Method


1. Put cupcake cases into a tray about 15 large
2. Melt the butter, sugar,treacle in a pan over a low heat and leave to cool.
3. Sieve the flour , baking powder, bicarbonate of soda and ginger into a mixing bowl
4. Add the milk, beaten eggs and the cooled butter mixture from the pan to the dry ingredients in the bowl.
5. Add the apples
6. Mix everything together and spoon into the cupcake cases.
7. Cook at gas 4--350f--180C. I put them in the upper part of my gas oven. For 20 minutes.


These could be topped with butter cream with ground ginger added to the mixture and piped or spread onto the cupcakes.

Just serve them plain for those who do not like butter cream
If you want to make a loaf instead of cupcakes put into a 9 inch square tin and bake for 35 minutes at gas 3--170C--325F.
